The way EQs and compressors work differ from one implemenation to the next (and these particular ones are modelled after hardware units), so using one EQ with the exact same values as another EQ may give different results (and it's not necessarily that one is stricltly better than another, they may just have their strengths in different areas).
If you restrict yourself to just using a channel strip it stops you from going 'overboard' by slapping 20 plugins on a single track, half of which won't make a difference in the end (note: I'm not saying if you have a channel strip you can't use anything with it, but it's fun to see what you can actually achieve by just doing it this way).

Having everything you need in one window is easier to work with than trying to spread 5 plugins over your screen and then switching from track to track, plus re-arranging the order of EQ and compressor for example may be quicker than swapping plugins around. Having multiple plugins in one box will most likely reduce latency (again, not really an issue anymore nowadays).
